Now I’ll listen to whatever advice Ellen has, because I think she’s incredible and inspiring. But there are so many other reasons to add more vegetarian and vegan meals to your life. If you’re considering going vegan, this new blog is excellent and filled with tips for getting started. Ellen’s tips for easing into a vegan diet are so simple, it seems silly to me not to try them. Some tips include to designate one day a week to be “vegan day” or to stay vegan at home and allow yourself whatever you want when out socializing. I’m thinking of trying the “vegan day” idea! Another important thing to remember is to always have snacks like nuts, seeds, and granola on hand, because your metabolism starts to speed up and appetite increases. Ellen also explains that it’s important to remember to, “Start with food you already love. Sometimes you can get lost in the things you can’t have, but there is a world of food out there that you can still eat, and some of it is sure to be among your favorites.” For me, that would be pastas and salads. I could absolutely eat those foods everyday!
Ellen’s vegan blog also has tons of easy and delicious varieties of recipes, from vegan tacos and stir fries to vegan cupcakes and french toast. The blog always has links to many other vegan/ vegetarian resources. Ellen also lists the resources that have most influenced her such as books and documentary films, like Earthlings and Food Inc.
I’m sure all you Veggies out there already know this, but it’s truly amazing the difference that changing your diet can make. It’s only been two weeks of my trial vegetarianism, and already my skin is clearer, my pants a little looser, and my energy is higher! I might have to keep this up for good. Now after reading Ellen’s vegan blog, I’m more determined to have at least one vegan meal per week. However I’m pretty sure my love affair with cheese, chocolate, and ice cream is far too great for me to go full vegan.
